Spice Muffins
Great as either a breakfast item or a dessert, these muffins have a perfect wintertime flavor for an easy holiday treat.
INGREDIENTS:
1 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon allspice
1/8 teaspoon salt
1 egg
1/2 cup milk
1/3 cup melted butter or margarine
DIRECTIONS:
Stir together flour, sugar, baking powder, allspice and salt until well-combined.
In another bowl, beat the egg. Add milk and butter or margarine.
Pour egg, milk and butter mixture into dry ingredients. Stir just until moistened.
Line muffin pan with muffin with baking cups.
Fill each cup 2/3 full.
Bake at 350° for 20-25 minutes or until golden. (If your oven cooks hot, lower the temperature to 300-325°. These muffins are best if they don’t get too brown.)
If you like your breakfast on the sweeter side, or want to serve the muffins as dessert:
Melt 1/3 cup of butter.
In another bowl, combine 1/4 cup sugar and 1/2 teaspoon of cinnamon.
While muffins are still hot, dip tops in the butter and then immediately in the cinnamon, for a sweet carmelized topping.
