If you are looking for a great holiday dessert why not give our recipe for old fashioned sweet potato pie a try.
- 2 – 9-inch single pie crust
- 3 large sweet potatoes
- 2 sticks of butter
- 1 cup sugar
- 2 large eggs
- 1 cup evaporated milk
- 1 tbsp vanilla extract
Preheat oven at 350 degrees.
After washing the sweet potatoes, put them whole into a large pot and boil until tender. (Test with a fork. If the fork goes all the way in, then they are ready.)
While the sweet potatoes are cooking, take the butter with the sugar, eggs, milk and vanilla extract and mix together.
Once the potatoes are tender (fork goes all the way in), drain the hot water and cover with cold water. Leave to cool for about 5 minutes.
Once cooled, pull the skin off the potatoes and place them in a mixing bowl. The skin should easily come off just by rubbing it with your finger and breaking it open.
Once all the potatoes are peeled, add the wet mixture from earlier to the bowl of potatoes and blend together.
Once completely mixed together, pour the mixture into the pie shells. Cook for 1 hour. When done, place on rack to cool.
